Ingredients to make roughly 2 cups:
1 cup water
1 cup sugar
1/4 cup dried culinary lavender buds
Directions: Pour lavender buds into a small non-reactive saucepan. Crush buds gently with the back of a wooden spoon. This process releases aromatic oils from the buds. Pour water and sugar into the same saucepan. Now, bring the contents to a boil. Make sure the sugar has completely dissolved before removing the pan from the heat. Cover and let steep for at least one hour. Flavor will strengthen as it cools. Once it has reached your preferred flavor, pour the syrup through a mesh sieve and into a sterile jar. Cap tightly and store in the refrigerator for up to one month.
Use this concoction in place of any mixed drink that calls for "simple syrup." You can make a drink extra special by adding the syrup to taste. We like to use it in champagne, for aperitifs, or even vodka sodas. For a refreshing "mocktail," add some to chilled club soda and lime.
